ALL ABOUT SILVERBEET!

Writer's picture: The Foodstuff DiaryThe Foodstuff Diary

Silverbeet is similar to spinach but larger, with a stronger flavor. The main variety of silverbeet has a white stalk but colored varieties are also available.

I mean look at this beauty!

Though Silverbeet is pretty much very easy to grow, it is not a traditional part of Indian Cuisine. This leafy relative of Spinach and Beetroot comes from the coast of Portugal, Spain, and The Mediterranean islands.

Flavour Profile

This plant has a deep earthy flavor and a pleasant sweet bitterness

How would you know if you are buying fresh silverbeet leaves? Is Silverbeet and Rhubarb the same?

Choose crisp green leaves with firm white stalks. Avoid leaves that are wilted or damaged. Silverbeet with purple stalks are NOT rhubarbs!

The only thing common between a rhubarb and a silverbeet is the appearance. Swiss chard or Silverbeet has edible dark green leaves with prominent magenta veins. Rhubarb, on the other hand, has light green leaves. They are not edible due to the high content of oxalic acid. The only factor that makes both of them look similar is the edible red or magenta stems.

How to cook Silverbeet?

The young leaves can be used raw in a salad but silverbeet is usually eaten cooked. Puréed or finely chopped silverbeet makes an excellent base for many dishes. Use blanched leaves as a wrap.

Health Benefits of Silverbeet

Silverbeet is a good source of iron, vitamins K, A, and C, and calcium. It is full of antioxidants and the vitamins within it help to prevent inflammation. Silverbeet contains potassium, which helps to maintain blood sugar levels plus a high fiber content which is beneficial in reducing blood cholesterol.
